Cabernet Merlot Trinders 2007

Cabernet Merlot Trinders 2007 Image

The Cabernet Merlot blend takes inspiration from the classic red wines of Bordeaux. Cape Mentelle has developed an international reputation for outstanding Bordeaux varietal and blended wines which are perfectly suited to the climate and soils of Margaret River. This blend seeks to capture the depth and structure of cabernet with the dark fruit and plush flavours of merlot, which when blended create a well- rounded, full and rich style.

Dark cherry.
Lifted blackcurrants with mocha, dried tobacco leaf and hints of lavender lying underneath.
A concentrated palate led by fresh currants and ripe cherries. Generous texture and fruit weight are complemented by savoury oak, creating a long, even palate with fine delicate tannins.
Cabernet sauvignon (49%), merlot (42%), petit verdot (4%), cabernet franc(3%), malbec(2%).
Drink now to 2017.
Food Pairing Notes
Indian spiced lamb rack.
The Vineyard
The majority of the cabernet sauvignon and merlot for this blend were harvested from our Trinders, Wallcliff e and Foxcliff e vineyards. Th e majority of these vineyard soils are derived from decomposed granite and consist of a gravelly loam over a deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth during the season.
The Season
2007 was one of the earliest recorded vintages in Margaret River. Th e season was marked by a warm dry growing season and will produce amongst the best examples of cabernet and cabernet merlot blends much like the very good 1999 vintage in their opulence, varietal typicity and concentration.
After destemming and light crushing, individual vineyard batches were fermented on skins for 10 - 25 days. At the desired balance of fruit and tannin extraction, each batch was gently basket pressed, with harder pressings kept aside. Once sugar dry, batches underwent malolactic fermentation in stainless tanks before being racked to oak barriques for 15 months maturation. 25% new oak was used, being a combination of Bordeaux coopered French and some American oak. Th e fi nal blend was completed in September 2008 and contains the highest percentage ever of merlot in the blend and was bottled in October.
14.5% alcohol, 5.64 g/l total acidity, 3.67 pH.

Australian Wine Companion 2010

James Halliday

A substantial wine, the medium-to full-bodied palate very much in the usual Trinders style; ripe tannins are woven through blackcurrant/cassis fruit, oak in balance.

Australian Wine Annual 2010

Jeremy Oliver

Stylish and modern... its smooth and polished palate of pristine ripe fruit, chocolate/cedar oak and fine, drying tannins finishes with a pleasing core of flavour...

The Big Red Wine Book 2010

Campbell Mattinson

This has ‘Quality’ tattooed across its forehead. It tastes of bay leaf and capsicum, spice, cocoa, and dusty gravelly red-berried fruits. It’s medium-bodied with firm, chalky tannins ... age will be kind to it - we’re quite sure.

Penguin Good Australian Wine Guide 2010

Nick Stock

... undeniably attractive... offering sweet cassis and roasting herbs, some mulberry and purple florals... The palate’s smoothly honed with even-handed, juicy fruit... finishing with toasty mocha and sweet dark berry flavour. Love it!

Australian Gourmet Traveller Wine

Huon Hooke

This is a bright, clean wine with herbal and blackcurrant aromas, which are fresh and fragrant. It’s elegant and medium- to full- bodied, with good balance and mild tannins. A drink-or-keep style

West Australian

Ray Jordan

Just superb. Leafy perfumed notes of mint and cedar with a deeper layer of black currant. The palate offers a supple generous blend that carries effortlessly to a very long finish. Now this is cabernet merlot with some real class.
